Every brewery has their favorite hop or even a signature hop. We’ve flirted with a few for a while, but we’ve never really landed on a single hop. Instead, we have a collection that plays together in various degrees of usage depending on the beer. And now Sabro is making its way into our rotation.
We love Sabro, but it requires great restraint when using it. Just a tiny bit can take over an entire beer and mask any other hop used. So, we throttle the intensity by using it as an accent hop. The most we’ve used is 12%, and you can still immediately detect it.
Sabro might be mighty, but it is also versatile. We used it in Particles Collide Gamma when we paired it with more piney hops. And now we are using it in Particles Collide Epsilon with fruity and tropical hops.
Epsilon is officially in the market. We did a team tasting yesterday and decided it tastes like Gamma and Delta had a baby. It is juicy upfront and dry on the back. It finishes abruptly like an IPA, not a syrup bomb. We all immediately detected pineapple and coconut. The combination makes a delicious Caribbean rum profile. And it pairs perfectly with summer!
